Who says "no" to diamonds, really? This one's a Guyanese Rum from the Diamond Distillery.
The distillery goes a long way back to 1966 when British Guiana gained independence from the Commonwealth, renaming itself Guyana. In 1975, the distilleries in the Demerara region were grouped together into a single collective known as Diamond. This region became well-known for the popular namesake Demerara-styled rum - with its classic aromatic bouquet on the nose, honey, pineapple, coconut milk notes, rounded with a smokey flavor laced through its profile. Demerara rums have been a long favorite with legendary independent bottlers, many of whom have made their name from this style of rums.
This bottling, coming from The Single Cask, is a lovely, classic version of the famous Demerara rum style. To give it a more rounded flavor, this was finished in an ex-Malt Whisky Oak Barrel.
If you want to know what all the fuss is about, this is a great introduction. If you already love it, then you already know this is good stuff.
Goes great with barbecue, dessert or a nice pasta dish, seafood or grilled red meats.
Tasting Notes:
Nose: Hints of liquorice, brown sugar, cane juice, mint, dark chocolate and black pepper
Palate: Cane juice, liquorice, brown sugar, dark chocolate and mint
Finish: Lingering finish with liquorice, dark chocolate and mint on a bed of brown sugar
