What is whisky? We have some general ideas of that.
You might say it is a spirit made by fermenting malted barley, distillation and aging in oak barrels. Or you might say it is any spirit that smells and tastes somewhat similar to other whiskies you have encountered.
Yet, the are some new and experimental distilleries that challenge our conventional ideas about whisky and how it should taste.
Japan's Suntory insists that rice can be used to make whisky too, and no this isn't sake. The highly-sought Suntory Rice Whisky release was made by using whisky-production methods on rice grains to produce a groundbreaking release that is highly aromatic and refreshingly crisp, with peaches, nectarines and plumerias.
Kavalan Distillery's Solist Vinho Barrique release is matured using shaved, toasted and re-charred (STR) barrels, then steeped in Taiwan's sub-tropical climate which promotes greater cask-whisky interaction. The result is a sweet but very intense oakiness with a note of leather and hazelnut Loacker waffles.
Finally, we have the Rampur single malt that doesn't quite taste like any existing category whiskies. This was distilled and matured in the climate of northern India that is subject to massive temperature changes (from 0°C-45°C). The hot Indian summers create an unusual and incredible sweetness with a cocktail of ripe Thai mangoes.
