Flavour Profile: Smokey and Peaty
Most “sherry casks” used by modern whisky distilleries are not seasoned with genuine sherry that only comes from the Jerez city in Spain. Due to cost constraints, they are seasoned with only fortified wines from less renown wine regions such as Huelva or Montilla-Moriles. This particular expression is matured using genuine sherry casks sourced from Miguel Martin, a renowned Jerez city.
Smooth and well-integrated triumvirate of ash, salt and acidity. On the nose: ashy smoked bacon with a layer of salinity, developing to a sweet honeyed maltiness. On the palate: ashy smokiness and singed orange peel with substantial dryness that develops into sweet pink grapefruits and green apple candy. The finish:long, ashy, lightly briny, and a fading note of apple cider vinegar.
