Overall - Have always enjoyed Akabu sakes and sakes made with Omachi rice. Chanced upon an Akabu with Omachi while out shopping last week and quickly grab a bottle. Omachi rice is the ancestor of the king of sake rice, Yamadanishiki. Polished to 50%, this sake has the fruity aroma of 🍌, 🍑, Lychee and steam 🍚. The taste and body is light and falls under the Kun-shu category. With a medium sweetness and coupled with a short and clean finishing, it makes the sake well balanced and easy for food pairing. I have it chilled and paired with jumbo 🍤 cocktail on ice and the sake enhanced the sweetness of the 🍤 making it taste more delicious. A total of 4 prawns does not really justify what the sake can do. I’m sure the sake will make good combinations with other seafood like raw oysters and kani or simply as a chill out drink on its own.
Overall, this is a very good sake.
