Amabuki Junmai Daiginjo "Banana Yeast"

Amabuki Shuzo is known for using unique yeasts to brew their sake. Most of the time they extract it from flowers. This particular bottle is a namazake, made with banana yeast. Hints of ripe banana but not overpoweringly sweet - in fact it was quite refreshing.
