Overall - This is a bottle of namazake which is quickly bottled after squeezing and refrigerate throughout summer. With a fruity aroma and light umami, it has a citrus acidic taste on the tongue. Slightly bitter dry at the swallow but mellows out quickly into a mildly sweet aftertaste. Giving off a refreshing feeling.

With a medium taste, food pairing is made simple enough. I paired it with simple home cook food that consist of lightly bleached spinach with XO sauce and oven grilled hamachi kama and tatami iwashi. As the food are mostly medium to strong flavored, the sake complimented the food and make them well balanced and enhances the sweetness of the hamachi kama. Some other pairing I could think off is Korean Military Stew where the spiciness of the kimchi and heat from the soup will definitely go very well with the chilled sake. This sake needs to be served chilled at around 10-12c in order to savour the freshness of it.

Overall, this is a good sake from Azumarikishi.
