Overall - The effects that various substances born from fermentation have on humans have always been valued since ancient times and are often known as the "best of all medicines". Dassai DEX contains Dassai Exosomes which is born during Dassai’s fermentation. Dassai Dex also focuses on the power of fermentation and returns to what it has always been known for.

Brewed with the King of Sake 🌾, Yamadanishiki, this sake display citrus 🍊 aroma with a light sparkling sensation. Clean and crisp on the mouth with a slight citrus bitterness at the back of the throat. The acidity tend to linger for quite awhile with every sip. This is also a Shinsei 新生 sake which means it is bottled and sold without storage and without pasteurization hence it needs to be stored and enjoyed chill at around 10c.

I would suggest pairing with simple and light tasting dishes such as salad, cold tofu, sashimi, 🍢, 🍣 in order to savor the fruity aroma. Cold soba will also make a good combination with this sake or just plainly drinking it on its own as a pre dinner drink. Recommended for people who haven’t tried a Shinsei before.
