Notes - To continue the gastronomical journey at the Dassai bar and @ukaiteikaohsiung, I decided to go for the crown jewel (also the most expensive 🍶) on the Dassai menu, the Dassai Future, with polishing ratio of 8% as the 3rd bottle for the night. The story behind this bottle is as interesting as the Dassai 美酔。During Yamadanishiki 🌾 farming, about 10% of the harvested 🌾 will not be fit for sake making. Such 🌾 is called “Togai” and most brewers will not purchase this 🌾 because even if used, the 🍶 produced cannot be branded as Junmai or Honjozo which is why although this bottle is polished till 8%, it cannot be branded as Junmai Daiginjo. Clean and light on the tongue with a slight 🍍 sourness enveloping the mouth. Low acidity with complex ginjo notes and explosive fruity aroma.
Pairing with the final few dishes which include grilled live abalone with 🧈 sauce and 🇯🇵 Wagyu tenderloin with vegetables and crispy 🧄 slices. As the 🍶 is clean and light, it helps to cleanse the palate by getting rid of the greasy feeling from the 🧈 sauce and dissolving the marbling fats from the wagyu. It also helps to ready the palate for desserts.
Overall, this is a really excellent 🍶. Worth every bit of the penny. 💰 💰 💰
