Overall - First time trying a seasonal winter 🍶 from Dassai 獺祭 。This 🍶 is only available from October to March and it is bottled as Nama 生酒。This 🍶 does not undergo any form of heat treatment and needs to be stored chilled at 5C or below in order to maintain its freshness. Once opened, it is best to consume the whole bottle completely. Full of fragrant aromas that consist of snow 🍐, 🍏 and floral which is typical of a Junmai Daiginjo 純米大吟醸specially from Dassai. I would have thought that this 🍶would be light in taste but actually I was surprise when I first tasted it. The medium taste and light umami really make the different aromas more distinct. Being medium dry sweetness and light body, it makes the 🍶 well balanced and rounded and can almost be paired with any food. I paired it with a Chinese dinner last night which consist of 酸菜鱼。The sourness and hint of spiciness from the 花椒 really goes well with the medium dry 🍶. And we completely finished the whole bottle with guests asking for more. This 寒造早槽is significantly different from the normal Dassai 45 as I feel it is more fragrant than the normal Dassai. I think Dassai seasonal 🍶is worth to try.
Overall this is a very good 🍶.
