Overall - This is a seasonal sake from Eiko Fuji and is my first time tasting and reviewing this brand. This is also a sake which comprises of all the interesting brewing steps such as Muroka (unfiltered), Namazake (unpasteurized) and Genshu (not watered). Hence it needs to be stored and enjoy chilled to maximize the flavor. Fuji Shuzo, the brewery responsible for making this sake also has a full range of standard sakes.

Being light yellow in color and displaying notes of raspberry and 🍑 aroma. This sake is light tasting with low umami. Typical characteristic of a Junmai Daiginjo. With an alcohol of 17.4%, you might feel a slight bitterness at the back of the throat but it will mellow out into a sweet note after a few seconds. It is an easy to drink sake with lots of characteristics.

This sake was paired with hotpot during Chinese New Year’s Eve during a gathering over a friend’s place. I must say it goes really well with the 老母鸡汤 and the 麻辣汤. Even as the taste of the soup base is worlds apart, the sake somehow manages to blend with them and making them less oily. Being a delicate and soft sake, it goes really well with food that are simple and plain in flavors as it will help to bring out the freshness of the food and enhance the original taste of it. Easy enough to drink on its own as well. Recommended for all levels of sake drinkers.
