Notes - Fuji Shuzo has a brewing history of 240 years in the making and is ranked one of the top 3 breweries in Yamagata Prefecture along side with Takagi Shuzo (Juyondai). They are an expert in using Kyokai Kobo 10 which is founded in Yamagata and also excel in producing muroka nama 🍶.

Brewed with Dewanosato 🌾 which is Yamagata’s original 🌾 which was produced with the aim of becoming the best 🌾 for Junmai 🍶. Soft and smooth in the mouth with lots of citrusy aroma. Slight fizziness can be felt due to it being a namazake. You can also taste the refreshing freshness of the sake in its raw form. A light sourness yet couple with a tangerine sweetness could be felt as it slides down the palate leaving behind a soft bitter aftertaste.

Pairing would be best with 🥗 or light dishes in their natural sweetness so as to savor the best of this 🍶. I hope I get to try their other offerings in the upcoming weeks. 😊 😊 😊
