Notes - After enjoying the sparkling 🍶 from Gangi, decided to try their standard lineup of Junmai Daiginjo which was brewed with 100% Yamadanishiki 🌾. Smooth and delicate on the tongue with aromatic ginjo notes of seasonal fruits. Low acidity and very well balanced in the mouth and finishing off with a nectarine aftertaste.
Since I’m back in 🇹🇼 for my holiday, food pairing with local Taiwanese dishes is a must. Hence, I paired it with Taiwanese “Lu Wei 卤味”. ”卤味“ is basically a mixture of different braised items consisting of pork, pork organs, meat balls, fish cakes, vegetables, tofu bean curd, bean curd skin, peanuts and seaweed which has been braised in a light soy sauce dressing for many hours to ensure that the soy sauce has been infused with the items. As the sake is light and aromatic, it does add another level of umaminess and sweet fragrance to the braised items which makes it even tastier and I cannot help but finish half a bottle with the food. Really a perfect pairing IMO. Need to be enjoyed chilled to preserve the aroma of the 🍶.
Overall, this is an excellent 🍶. 👍 👍
