Notes - Brewed with 3 kinds of 🌾 and the spring water from Mount Hakkaisan, this Junmai Daiginjo has lots of complexity. Clean and delicate on the tongue with slight grapefruit flavor. Medium high acidity felt as it slides along the inner side of the cheeks and finishing off with a reminiscent of fragrance cooked 🍚 in the throat.

With medium umami, this sake is good to pair with meat dishes especially with meat that is roasted or pan fried or smoked. I paired it with a simple home cooked dinner consisting of pan fried chicken breast, asparagus and mash 🥔. The acidity of the sake compliments the chicken breast and makes it felt less dry as it stimulates the saliva glands to promote more saliva. As the food are low in seasoning (trying to eat more healthily), I get to appreciate the sake more and also thoroughly enjoying the different layers of flavor it makes when pairing with the different food. This is a nice bottle of Niigata style Junmai Daiginjo which is dry and straight up and not too overly sweet. A very unique one as well as it uses 3 different kinds of 🌾.

Overall, this is an excellent sake. 💯 🎉
