Overall - Got this bottle at Isetan Scotts Supermarket yesterday while packing Sushiro sushi and sashimi as a good friend was coming over for dinner. Wanted something not too flowery thus decided to try the Tokubetsu Honjozo with 55% polishing. The aroma was largely made up of 🍄 and soy sauce which falls perfectly into the Jun-Shu category. The medium umami matches the medium body and taste and give the sake a robust texture. Brewed with Gohyakumangoku 🌾 and also helming from Niigata, the taste is sharp and crisp medium dry. The medium tail is also good at letting me taste the complexity of the sake as it lingers at the back of my throat with some umami still surrounding it. Pairing with raw sushi and sashimi is a prefect combination as the sake removes the fishy taste from the saba sushi. It also goes super well with the pickled bean sprouts appetizer which serves as a snack with the sake. A good value sake for an evening of humble gathering at my place.
Overall, this is a good sake.
