Notes - As the name suggest, this 🍶 was aged in the Yukimuro for 8 years in constant temperature of around 3C. As such, Hakkaisan was able to create a smooth and elegant flavor while retaining a light taste. Light and delicate in the mouth and yet with an aroma of miso and soy sauce due to the aging and the use of Yukinosei 🌾. Medium acidity that lingers quite a bit and finishing off with a slight spicy aftertaste. It is also a 🍶 that symbolizes 8 years of Hakkaisan and it contains 8, 8, ha, ha, ha and all things auspicious.
Tried this at the Hakkaisan Sennen Koujiya located at Nihonbashi and I felt that it is good to pair with any food that has a strong umami taste such as ikura, kani miso paste, truffle, etc. Personally, I still prefer the Hakkaisan 3 years snow aged as I felt that it is much more delicate and full of ginjo aroma. This 🍶 is nice as well just that perhaps it has been aged for a little too long and I’m not particularly fond of aged 🍶.
Highly recommended for 🍶 lovers who enjoyed aged 🍶 or for people who haven’t try Hakkaisan ❄️ aged 🍶 before. ⛄️ ⛄️ ⛄️ ⛄️
