Overall - Hatsumago has been producing Kimoto style sake for many centuries and they are considered as one of the leaders for Kimoto style sake. As the name suggest, “魔斬” or Makiri is a sharp knife handed down in Sakarya and is mainly used by fishermen. It is also a lucky charm to protect against evil because it kills demons. Made with Miyamanishiki 🌾 from Yamagata, this sake has the aroma of rose, 🍈 and steam rice. The taste is medium with light body and umami which makes it an in between of so-shu and jun-shu. The level of umaminess balances the body and the dryness makes the sake more rounded. Although the length is medium, it does not feel too dry or heavy on the throat as the body is light. I had it chilled at 10c and paired it with Chinese Dim Sum which consists of mostly fried items like spring rolls and carrot cake. Because of the light body and medium taste, it actually helps to make the deep fried dim sum tasted not so oily which is a good match for me. It also allows me to taste the flavor of the ingredient of the dim sum by removing the greasiness from it. This sake is good to pair with deep fried food like chicken wings or satay. I will also recommend this easy to drink sake for first timers of Kimoto style.
Overall, this is a very good sake.
