Overall - First time trying a Hyakujuro sake. Brewed with Hatsushimo 🌾 polished to 60%, this sake is full of fruity aroma consisting of 🍈, 🍏 and 🍌. This is a light body sake with medium taste and umami. Just the right match if you prefer something light but at the same time wants something with more umami. Sometimes it’s kind of hard to find something fruity and yet having the right kind of umami that tend towards a Junmai style. With a medium length of the sake, you will feel more of the umami lingering at the back of the throat for some time. I had it chilled at around 15C and you can slowly feel the aroma of steam 🍚 appearing slightly. This smooth and mellow sake will make good combination with most food especially food with stronger flavors. I paired it with “XO Sauce” fried rice from the Fried Rice King and Japanese preserved bean sprouts. Both of which are strong flavor food. The light body of the sake helps to reduce the oiliness from the fried rice but at the same time the umami helps to elevate the taste.
Overall, this is a very good sake.
