Overall - Having been impressed with my 1st Jikon Asahi previously, I decided to try my 2nd bottle of Jikon sake. This time a Muroka Nama (unfiltered Junmai Ginjo. Since Jikon is ranked number 4 in terms of sake brand in Japan in 2021, I’m sure this sake will not go very wrong. Had it chilled in an ice bucket to around 10C. The aroma is largely evident of 🍌 and 🍈 with subtle hints of vanilla. The taste is light and freshening. Being a namazake, I can also taste the ricey flavor in the sake. It could be also due to the 100% Yamadanishiki 🌾 that was being used. The light umami and body compliments the medium sweet taste and makes it a great drink to start the night with side dishes. The tail is short which is also good to make the side dishes stands out without overpowering them. I paired it with raw egg gohan with butter and potato salad with kani miso paste. The sake really makes the kani miso paste stands out and reduce the fishy smell of the paste.
Overall, this is an excellent sake.
