Notes - Have always been a fan of Kaze no Mori and have been reviewing a lot of their Alpha series 🍶. The 507 series is their regular 🍶 which has the highest polishing ratio of 50% and using Kyokai Kobo #7. The bottle opened with gases trying to rush out. Very fine bubbles can be seen rising gently as the 🍶 was being poured into the glass. Light sparkling sensation can be felt as soon as the 🍶 touches the tongue. Smooth and full of explosive sensation as it surrounds the mouth. Aromatic and yet displaying characteristics of a Junmai shu. Well balanced and ending with a slight bitterness.

This 🍶 is so aromatic and smooth that it can easily passed of as a Junmai Ginjo and will be good to pair with food like sashimi, sushi, coriander 🥗 or grilled fish collar. I paired mine with fresh sashimi and I can swear it definitely helps to enhance the flavor and make it feel more refreshing. The slight bubbling also have a citrusy effect on the sashimi which makes it even more exciting. This 🍶 is so enjoyable and easy to drink that it can be enjoyed on its own as well.
