Notes - This is the 真中採り version which is more premium than the normal Alpha 6 (which I have reviewed previously). It also comes with an Aramasa Amaneko (新政 亜麻猫) tag as a collectible. 真中採り is the Nakadori portion further divided into several tanks for storage and only carefully select the 🍶 with the most consistent flavor. Brewed with white koji and Kyokai Kobo #6 as a respect to the mother of modern yeast. Another interesting fact is that since Aramasa has tons of knowledge in using white koji, they decided to make koji 🌾 with Akitsuho 🌾 (using white koji) and brought it to Kaze no Mori to combine with their koji 🌾 to make this 🍶.

The bottle opened with a slight escape of gas similar to the normal Alpha 6 version. When poured into a glass, stream of fine bubbles can be seen emerging and disappearing. A very therapeutic sight indeed. Fizzy and light in the mouth with a little popping sensation as if eating “popping candy”. Medium acidity can be felt and the white koji makes it very zesty and refreshing and ending with a slight grapefruit bitterness. I preferred this 真中採り version better as it is more intense in aroma and robust in taste compared to the normal version.

Personally I enjoyed Kaze no Mori especially their limited edition 🍶 which always have a story to tell in the background. Due to its bodaimoto production method which always have a fizzy sensation when first opened, it acts as a refreshing drink for 🇸🇬 hot weather. 👍 👍
