Overall - This sake from Kirinzan is brewed with 100% Koshitanrei 🌾 from Niigata. This rice is a thoroughbred discovered recently in 2004. It is a thoroughbred of the number 1 sake rice Yamadanishiki and the oldest sake rice Gohyakumangoku. Having said that, Gohyakumangoku was also discovered in Niigata in 1938. The aroma is a mild mixture of vanilla, 🍈 and 🍌. This is a seasonal winter sake which is freshly squeezed in Dec and bottled for sale in Feb (2-3 months after) and is also considered a shinshu. It is also a namagenshu which means raw and without watering down. The taste and body is light and airy which is a so-shu type sake. The light umami compliments the airy texture of the sake and makes it smooth and mellow. Being a Niigata style sake, it is crisp and medium dry. The medium length also makes it easy to pair with most food. I paired it with local Zi Char fare like 烧焦米粉,sambal sweet potato leaves, crispy prawn roll and stir fry beef. As the sake is light, it helps to bring out the taste and freshness of the food. A very good bottle of namagenshu for beginners to start with.
Overall, this is a very good sake.
