Overall - It has been quite awhile since my last bottle of Kubota. This time round decided to try their Manjyu 萬壽. Kubota has always managed to surprise me with their aroma. This sake is like a Jun-Shu with ingredient aroma that consist of 🧀, yogurt and rice koji which are typical of a Niigata style sake however it does have a reminiscent of flowery note. I would have imagine it to be on a slightly fruity side due to its seimai buai of 33% which is highly polished but I was wrong. The medium umami makes this sake feel rich and stands out from the food that I am pairing with which is chutoro sashimi. The medium taste and body compliments the level of umami and make the sake a well balanced one. Being a medium dry sake with deep flavor, it can easily be paired with food that are rich in flavor like beef steak sautéed with butter or even deep fried tonkatsu. The medium body and length will easily wash away the fatty feeling in those food. If you like the Kubota series of sake, this is one of their best in class in their series. A must try I would say.
Overall this is a very good sake.
