Notes - Hassen which means the Eight Immortals (八仙) which originated in ancient China. Stories about the Eight Immortals and their earthly exploits often detail the delightful ways in which they enjoyed drinking their favorite wine and spirits. Hachinohe Shuzo named their sake “Mutsu Hassen,” which means the Eight Drunken Immortals of Tohoku, after this legend.

The Junmai Ginjo “Black Label” is a regular sake on its list of lineups. Clear and crisp on the tongue. Medium acidity with a sharp bitterness at the back of the throat. Grapefruit tartness that lingers in the throat for quite awhile before mellowing out into a sweet note. I paired it with a packet of つぶし豆 🥜 which I have gotten during my transit at Narita Airport which is also the place I picked up this bottle while waiting for my flight to Chicago.

Due to the medium flavor and body, I would highly recommend food pairing of Japanese Sukiyaki or curry rice so that the umami of the sake will enhance the strong taste of the food to further increase the aroma and flavor of them. This sake is also highly recommended as a second bottle during dinner to go with western main course of beef steak or roast 🐓 as this sake will help to wash away the oily feeling from the food and make the food less rich. Best to drink chill to enjoy the complexity of the aroma.
