Notes - This sake is commonly known as Ura Nabeshima and only a small number of bottles are available for sake. It is also our 3rd bottle of the night at @izakayaniningashi. This sake is a combination of Arabashiri and Seme. Arabashiri is the first run sake and is the one that comes through the pressing machine with little or no pressure. It is also slightly cloudy and rough in taste but giving off fresh, flagrant aroma. Seme is the third run of highly pressured sake with high alcohol content and plenty of off flavors. However the final product is dry and light with robust fruity aroma enveloping the walls of the mouth. Medium acidity can be felt as it slides down the throat finishing off with a slightly bitter sour aftertaste.

Food pairing was with dessert consisting of vanilla ice cream mochi with a mountain load of azuki 🫘. Luckily with the dry and bitter sour sake, it actually balances off the otherwise overly sweet dessert making it less sweet and more enjoyable. I would also suggest food pairing with spicy hotpot or Thai food which the texture of the sake would make good combinations with.
