Overall - My first time trying a bottle of Ohmine sake. A little history of Ohmine Shuzou. It resumed operation in 2010 after a break of 50 years. Ohmine sake is brewed using “Benten Water” which is also know as “Water of Gods” and locally grown Yamadanishiki 🌾. This bottle of Ohmine is a seasonal nigori namazake which is a raw sake and with sediments. The color is cloudy white and you will need to shake it lightly before serving. Once opened and served, I can observed a light fuzzy bubble which disappear after about 20 secs. This sake has a very fruity aroma and different fruit notes starts to appear once the sake gains temperature. Steam 🍚 aroma is evident at first due to the nigori sediments. After which the fruity notes of lychee, white 🍑, 🍌 will all come into play. The light taste and body matches the very fruity aroma which is always great as you do not want the sake to feel too heavy with such a fruity note. The level of umami is light but the medium tail makes up for it as it will linger in your throat even after some time of savoring it. Being a medium sweet sake, it is easy as an aperitif or after meal drink to pair with dessert. It is also good to pair with food which are strong in flavors. I paired it with bbq sauce grilled pork ribs and yakitori sticks. I would have finish the whole bottle by myself had I not restrain myself from doing so. This brand definitely makes it into my top 10 and I will be drinking more of them and writing more reviews.
Overall, this is an excellent sake.
