Notes - Shichiken is brewed in Hakushu, a town in Hokuto City. 80% of Hakushu is untouched forest that is designated as a UNESCO Biosphere Reserve. Hakushu is best known as the home of Suntory Hakushu Distillery and as such Shichiken matures the sparkling sake “Morino Kanade” in Suntory’s whisky barrels. Also the 💧 of Hakushu are incredibly soft and smooth and rich in minerals.

Shichiken is brewed with premium sake-specific rice grown locally in Hokuto through a partnership with the local government and farmers. In 1999, Yamanashi Meijo Inc. established an agriculture corporation to cultivate Shichiken’s original sake rice. By having the brewers participate in rice farming, they can now grasp the condition of the rice and adjust the brewing process accordingly.

This Junmai namazake is clean and crisp in the mouth with lots of Junmai aroma and umami consisting of freshly chopped 🪵, 🍄 and even some minerals like limestone. Medium acidity with some spiciness can be felt as it goes down the throat and leaving behind an umami taste of toasted seaweed that lingers on for quite awhile. A refreshing taste can also be felt with every sip. A simple and easy enough to drink 🍶 that can be enjoyed at all occasions. 🥂 🥂
