Notes - This 🍶 was brewed using a combination of yamadanishiki and saito no shizuku 🌾. Saito no shizuku 🌾 is an original brewer’s 🌾 from Yamaguchi prefecture and is mainly produced in the mountainous area of Shimonoseki city where the brewery is located. Light and airy in the mouth. Aromatic fruity notes of 🍊 and 🍑 and finishing off with a slight sour aftertaste with medium acidity in a well balance manner. I have always enjoy Tokubetsu Junmai over just Junmai as usually a Tokubetsu Junmai has more complex flavors rather than just an overpowering 🍚 fragrance.
Didn’t manage to pair any food with this as I just happen to stop by for a drink @sakemaru_tw located at 春大直。I think this 🍶 is versatile enough for both sweet and savory food and I’ll definitely love to pair it with cakes which are not overly sweet like a slice of 🍋 cake or even something savory like quiche 🥧. I believe it will add a mild sweetness to the 🍋 cake and also make the quiche more balanced in flavor by reducing the saltiness from the cured 🍖. Would definitely love to try a bottle if I can get hold of one when I’m back in 🇸🇬.
Overall, this is a good sake. 🥂
