Notes - Kamikawa Taisetsu sake brewery 碧雲藏 “Hekiungura” is the first sake brewery in 🇯🇵 that is located within an university and this sake was made in Obihiro University using the underground water of the campus. Brewed with 💯 % Hokkaido local 🌾, Suisei, the aim of Kamikawa Taisetsu is to carry out small scale production in order to achieve high quality sake using traditional hand brewing methods and creating sake to pair with Hokkaido food.

Simple and clean on the mouth and yet with muscat like aroma and acidity surrounding the palate with every sip. The umami is just nice to pair with the heavier tasting dishes at the Omakase dinner at Sushi Kyuu. It really goes well with the Overflow Ikura 🍚 and the Uni sushi as the sake elevates the umaminess of the ikura and uni bringing them to another heavenly level and making them taste like they are freshly eaten right out of the 🌊. Other dishes that will make good combination will be fresh 🦪 or unagi 🍚. A very delicious Tokubetsu Junmai and highly recommended for 1st and 2nd main course.
