Notes - Wakaze is an experimental sakagura that is making 🍶 for modern times. Trained in 🇯🇵, Wakaze brewed their 🍶 from 🇫🇷 using centuries old knowledge, 🇫🇷 ingredients and innovative techniques. Wakaze 🍶 are environmentally friendly and adapted to a modern, international audience. Wakaze also laterally translates to “young 🍶 brewer.”
However, this 🍶 is brewed in Yamagata 🇯🇵 using local Yamagata 🌾 polished to 90% and hence it is a nihonshu. You might wonder how would the 🍶 taste like with only 10% polished off from the 🌾 and this is also the 1st time that I tried a 🍶 with that % of polishing. Well rounded and balanced in the mouth with the taste of 🍯 being diluted in 💦. Smooth and medium sweet as it glides down the throat with some acidity intertwined within. A rather short finish despite a weighted body. I can understand why this 🍶 is popular in 🇫🇷 due to the acidity that resembles 🇫🇷 🍷.
Due to its characteristics, this 🍶 is good to pair with 🇫🇷 cuisine, creamy seafood style dishes or even 🥩. I was told that the 🇫🇷 Wakaze version should land in 🇹🇼 in the next 1-2 months, I hope that I have the chance to try them all. 🤩 🤩 🤩
