Notes - This is a premium series of Zaku where the name comes from the Buddhist teaching that even in just a drop of💧, the immense life giving value of💧remains unchanged. This 🍶 is made with Yamadanishiki 🌾 and fermented slowly at low temperature using the ginjo-zukuri method.
Clean and elegant in the mouth with lots of fruity ginjo aroma to the nose. I can at least associate with 5 different kinds of fruits. Slight acidity can be felt on the inner walls of my cheeks. Smooth and easy to drink with a mild grapefruit tartness which leaves a slightly dry sensation in the throat after every sip.
As this is a very elegant and delicate 🍶, I just want to enjoy it on its own with some snacks and decided to do a home grilled Ehiire and Tatami Iwashi. Luckily the umami laden snacks didn’t interfere too much with the 🍶 although a good choice will be something lighter like tofu or sashimi. But nevertheless, this 🍶 is so good that no food is needed to complement it.
