Notes - This is a 新酒 Shinshu produced in the 3rd year of the Reiwa era (brewing year 2022). 新酒is freshly brewed 🍶 which is directly bottled after pressing and sold to the market. Brewed with freshly harvested 🌾, the 🍶 is light and aromatic in the mouth with lots of fruity aroma. Medium acidity and finishing off with a slight bitter Yuzu aftertaste. The bottle label design changes for every production and this year, Ise Katagami patterns of old plums and 🌲 decorate the bottle.

Pairing was done with the 🍢 omakase dinner @lapaix_heichan. With a 🍶 that is so gorgeous and refreshing, it really goes well with the spring roll, 🇯🇵 Olivia Pork and pot 🍚 with fried white 🐟 and toasted seaweed. As the 🍶 is light, it doesn’t overpower the dishes but at the same time add a hint of sweetness to them. Was really a good recommendation by the team at the restaurant.

Overall, this is another excellent 🍶 from Zaku and highly recommended for people who hasn’t tried 新酒.
