Highland Park 37, 1967-2004, Oak Cask No. 10197, 480 bottles, 47.5% abv.
This HP single cask was specifically distributed in Japan. Seems like 1967 was a monstrously great vintage for HP.
Nose: used oil, meaty fragrances, Chinese cooking wine cooked pork, notes of vanilla come out with time, back aroma of syrup.
Palate: smooth, initial palate is honey sweet,
mid palate has some spice that comes with the sweetness, back palate reveals smoke, vanilla. With time the smoke and vanilla flavors come out earlier, or perhaps my palate is getting accustomed to it and therefore I am able to sense it easier? Very well balanced.
Finish: long, oily, the juices that come out when you stir fry vegetables with beef or pork, quite minty too.
Wow, this is an amazing dram! So well balanced, smooth, well bodied, extremely tasty, has multiple elements and distinguishes them so well in varying phases. I felt a display of oils, honey, smoke, with side characters of vanilla, and spice or mint that combine to tell a wonderful story. This is what HP should be. Return to former glory and bring dreams long lost!
