I promised three daiquiris for the #whatsinyourdaiquiri challenge so here is number two. A fruity, flavorful raspberry daiquiri, similar to one I did earlier this year but much improved. The daiquiri has been criminally misrepresented by beachside hotel bars and chain restaurants for decades but we are taking it back. No blenders. No artificial fruit syrups. No sour mix. Just good rum, fresh lime juice, and natural syrups. ⁣

2 oz Plantation 3 Star⁣
.75 oz fresh lime juice⁣
.75 oz cold infused raspberry syrup⁣

shake, strain up, garnish with a lime wedge.⁣

Plantation(in the process of changing their brand name to something less offensive) makes some fantastic cocktail rums. Widely available and reasonably priced, their 3 star expression features a blend of white rums from barbados, Trinidad and Jamaica.

Cold infused raspberry syrup is similar to regular raspberry syrup but preserves the fresh raspberry flavor more than a cooked syrup which often becomes jammy. Use confectionery sugar to cover fresh raspberries and let them sit in the fridge overnight. By morning the sugar will have mostly dissolved but not before pulling the natural juice out of the raspberries. Then simply strain out the solids and enjoy!⁣
