Benton's Old Fashioned 2 oz Bacon Fat Washed Bourbon (@basilhaydens ) 1/4 oz Maple Syrup 2 dashes Angostura Bitters express orange peel and garish with a slice of bacon. It's an immutable fact of the universe that bacon makes everything better. The Old Fashioned is no exception. Don Lee of PDT created this cocktail in 2007 and kind of launched the trend of fat washing cocktails. I've now seen cocktails washed with anything from olive oil to Bleu cheese to duck fat. This is my second time fat washing bourbon with bacon and to be completely honest I've been underwhelmed both times. This was a great drink mainly because it was a maple syrup old fashioned and had a stick of delicious uncured bacon as a snack on the side, but the fat washing didn't add much for me. The original recipe recommends four roses bourbon and grade B maple syrup, neither of which I had.
