This is the Penicillin #2

2oz Reposado Tequila⁣ (Espolon Tequila)

1oz ginger agave syrup⁣

.5oz lime juice⁣

. 5oz lemon juice⁣

.25oz mezcal⁣ (Del Maguey Mezcal Vida)

Shake all except the mezcal. Strain over ice. Float mezcal and garnish with candied ginger. ⁣

The original Penicillin was created by Sam Ross of Milk and Honey in 2005 and is widely considered a modern classic. At heart it's a sour like a whisky sour or a daiquiri but it packs a few surprises in the form of a bangin honey ginger syrup and a smokey Islay single malt float. ⁣

This twist on the new classic swaps Reposado tequila for blended scotch and mezcal for the smokey Islay single malt. Then I made an agave based ginger syrup to compliment the other agave ingredients and split the citrus 50/50 lemon lime to bridge from ginger to the mezcal and tequila. The smokey aroma of mezcal hits you before you even take the first sip. Then gives way to the crisp spice from the ginger and the tart citrus. ⁣
