The Blind Bandit
This is one of the cocktails from the
Boston Baijiu Bar Avatar: TLA themed menu. This is an earthy, chocolaty old fashioned named for Toph.
1.5 oz Shiitake Mushroom infused, brown butter washed Teeling Irish whiskey
.5 Moutai BuLaoJiu
.25 corn syrup (50:50 Nixta and demerara syrup)
Half dash chocolate bitters
Stir, serve over a large cube, garnish with 2 drops of lavender bitters on the cube.
Moutai Bulaojiu is a medicine aroma baijiu from Guizhou province, where I used to live. It's got a wonderful flavor that combines savory umami notes like soy sauce and mushroom with a rich dark cocoa taste.
To make the mushroom butter Teeling I sear shiitake mushrooms in butter till both start to brown, then add the seared shrooms and butter to a bottle of Teeling and use an immersion circulator to hold it at 147 degrees for 3 hours. Then freeze it and strain out the solids.
Nixta is a really interesting corn liqueur. On its own the flavor was slightly overwhelming in this drink, so cutting in with demerara syrup worked to tone down the corn flavor while keeping the drink sweet enough.
Lavender bitters add a nice nose to the drink and go great with chocolate.
