Tropical Tonic
45 ml @plantation.rum Original Dark rum
15ml @wrayandnephewuk over proof rum
15ml lime juice
10 ml brown sugar pineapple syrup
top with @fevertreemixers aromatic tonic
I like a good gin and tonic, but occasionally I want something with more punch to it. So this is a rum and tonic with a homemade syrup and a blend of two great rums. I mixed this up to enjoy poolside on a hot summer afternoon and it hasn't failed me yet.
While the name might be problematic (they're changing it), everything from Plantation is gold and their original dark rum is no exception. Wray and Nephew is the standard for unaged over proof Jamaican rum in my book. It's hot and funky and I wouldn't change a thing. Together they make this a potent sipper that sneaks up on you.
The pineapple syrup was simply pineapple juice and a little bit of brown sugar cooked down and stirred.
Sticking with the tropical theme I chose fever tree aromatic tonic. It's got a bit of spice to it that reminds me of angostura bitters.
All together, this ends up being a funky, tropical way to mix up your summer day drinking.
