Newly Opened Mizue Is Cozy Japanese Tearoom by Day, Vibrant Wine Bar By Night


With a name derived from the Japanese kanji for water “” (pronounced mizu), the concept of liquid cascades through Mizue’s entire ethos – a traditional Japanese kissaten-style café by day flowing into a chic wine bar by night. Located along Singapore’s Club Street, Mizue offers an extensive selection of wines and sake curated by General Manager Myra Buccat, paired with Japanese-Italian-inspired bites by Head Chef Vikern Chua, all in line with the motto “slow it down, live it up.” 

Mizue draws inspiration from this timeless tradition, blending two distinct, harmonious experiences that evolve with the day’s rhythm. By day, it’s a peaceful retreat from the city’s rush; by night, it transforms into a vibrant urban bar. 

Kissaten by Day

Beyond the typical coffeeshop, a kissaten is a traditional Japanese café with an emphasis placed on slower, more intentional social interactions and exchanges of ideas between guests. 

The Mizue kissaten aims to provide a much needed break from the hustle of daily life, augmented by good food, good drink, and good music. During sunny hours, guests can relax to the backdrop of lo-fi beats while enjoying life’s simple pleasures: a still steaming cup of coffee made from freshly ground beans, crisp pages of a just-released novel, a quiet nook for introspection and reflection.

 

 

The day cafe menu sees Japanese undertones matched with global influence. Think ingredient-driven, honest cooking like Avocado Toast (SGD 16) speckled with togarashi; a Cubano (SGD 18) stacked with Japanese-style braised pork belly and homemade pickles; and Scallop Maitake Risotto (SGD 26) – an Asian twist on Italian risotto using Japanese rice simmered with shallots, ginger, sake, and dashi finished with a liberal lashing of butter and parmesan.

Wine Bar By Night


As night falls and the lights dim, the atmosphere transforms with lively house music and a selection of New World wines hailing from Australia, New Zealand, Hungary, Slovenia, as well as a smattering of Old World Varietals from France, Italy and Spain, honing in on biodynamic, minimum intervention wines from predominantly younger, boutique vineyards. Expect Japanese wines to make their debut showing in the coming season. In addition to the nectar of the gods, there is also a strong focus on sake, with 15-20 current varieties broken down into filtered, unfiltered, and aged categories, all sourced from numerous prefectures across the Land of the Rising Sun.



For the non-oenophiles, a series of ten classic cocktails with a Japanese twist span selections like the Houjicha Old Fashioned (SGD 25) with roasted tea-infused Makers Mark and Okinawa brown sugar; the sake and Sakura gin Kobe Martini (SGD 30); the play on a margarita dubbed Kappa’s Breakfast (SGD 28) shaken with mezcal, Japanese cucumber, coriander, lime, and a nip of green chili; and the daikon juice-laced Daikon Paloma (SGD 24), among others. Sixteen Japanese craft beers (by the bottle) and a growing selection of shochu and umeshu round out the nighttime liquid possibilities.



A spread of sharing plates tailored towards imbibing, the night food menu brings together Vikern’s past experiences in Italian and Japanese cooking, resulting in a clash of culinary cultures with dishes like the Japanese King Crab Ravioli (SGD 36) that create a moreish marriage of worldly flavours and techniques. Featuring Japanese King crab and Asari clams folded into Italian pasta dough, the ravioli is plated atop a velvety beurre blanc sauce. Likewise, the Pappardelle Kombu Beef Ragu (SGD 30) features classic Italian beef ragu tossed with freshly made pasta strands, enhanced by an extra burst of umami richness owed to Japanese kombu. The Carbonara Udon (SGD 28) takes a creative spin on tradition, blending Japanese and Italian gastronomic heritage with soy-marinated egg yolk, crispy guanciale, and a hefty hit of pecorino.



Similar to the gastronomic offerings, the transformative space and music adapt to the speed of the day via the Japanese philosophy of ‘wa’ (harmony) in both aesthetic and experience. The minimalistic, elegant décor is accented by chocolate brown leather sofas; retro Edison hanging lightbulbs above slatted wood counters; abstract paintings by British-Malaysian artist Tunku Khalsom that lend pops of vibrant color; and a focal point skylight to soften the warmer earth tones throughout. With a mix of bar top and round table seating for 40 patrons, Mizue makes for the ideal spot for anything from a coffee catchup to a corporate networking event to a romantic date.
