Ryuichi Saito, master mixologist of the Trunk Hotel in the highly fashionable Shibuya neighbourhood of Tokyo featured some of his bold creations a couple of days ago in Singapore. Naturally, I gravitated towards the gin based cocktail called Onden, inspired from the Japanese terraced rice fields two hundred years ago at Onden area itself. With rapid modernisation, the rice fields disappeared. Ryuichi then sought to create the cocktail that would bring those rice fields to life. Visually, the green leaf is intended to depict the verdant rice fields. His carefully selected ingredients comprise fresh flavours of summer which compliment the main botanical notes of the Bobby’s Schiedam gin.
