Buffalo Trace Releases Second Edition Of Experimental Daniel Weller Series

 

Buffalo Trace Distillery has debuted the second release in its experimental Daniel Weller series, this time featuring a mash bill made from spelt wheat and aged for 10 years.

For this second release, Buffalo Trace swapped it's signature rye for spelt wheat, an ancient grain primarily grown in Europe and favoured by artisanal bakers. Spelt was chosen for its known subtle sweetness and nutty character, which the brand says enhances the signature "soft and smooth" Weller profile while introducing unique nuances to the Bourbon's aroma and texture.

The whiskey is said to have nose notes of nuts and biscuits, complemented by freshly baked cookies, clove, cinnamon, nutmeg, fresh fruit, subtle leather, butterscotch, caramel, vanilla, and oak.

On the palate, it should have notes of dried fruit, baking spices, and tea-like floralness. 

Each expression is presented in a 750ml glass bottle featuring a unique compass stopper. The coordinates of Daniel Weller’s farm, located near Botland, Kentucky, are also inscribed beneath the stopper.

First created in 2023 using Emmer wheat, the series is a tribute to Daniel Weller, the grandfather of William Larue Weller and an early contributor to the family’s Bourbon-making legacy.

After settling in Kentucky in 1794, Daniel Weller established the family's distilling legacy, significantly shaping the region's spirits trade by both operating his own still and leasing equipment to others.

Specifically, the collection explores the impact of specific wheat varietals on Bourbon's flavor profile. By featuring a specific single grain  in each release, the series serves as a focused experiment that highlights how subtle changes in the mash bill shape the final whiskey.

Bottled at 47% ABV, the Daniel Weller second release will be available in limited quantities to distributors, select retailers, bars, and restaurants across the US starting in March 2026, with an MSRP of US$549.99.
