Christian Drouin, the famed Calvados maker, is back with their 6th edition of their experimental series "Angels" which features Calvados finished in various types of casks. For the 6th edition, Christian Drouin has ready a 17 Year Old Calvados finished for 8 months in the legendary Trinidadian Caroni rum casks from 1996.

“We had to find a Calvados that was powerful and structured enough to support the aromatics of these old Caroni casks. I usually push the reductions of our Calvados quite far to find the best degrees of balance, but for this Caroni Angels it seemed clear that the chosen Calvados needed to be maintained at a higher degree. After maturing for 8 months in these casks, the balance seemed to me to have been reached and Caroni Angels was bottled at 48.8%."

Official Tasting Notes
Aroma
Roasted apple and dried apricot blend into expressions of leather, petroleum and brown sugar.
Taste
Retains the liveliness and freshness of Calvados on the attack before revealing all its amplitude, richness and length.
Finish
Toasted, smoky and baked apple notes intertwine on the finish.
The Calvados is bottled at 48.8% ABV, with a total outturn of 1,506 bottles and priced at an RRP of 124 EUR.
This follows previous experimental "Angels" editions that featured finishes using casks for the likes of Jamaican rums from Hampden to Long Pond.
