Inspired by quaint brunch cocktails such as the Bellini, Melbourne's Four Pillars Gin has announced the launch of their new Three Peach Gin.

The distillery says the expression was made with "long lunches and boozy brunches in mind", and is a lower ABV gin "perfect for those daytime drinking occasions".

The botanicals in this gin include juniper, bourbon vanilla pods, roasted almonds, roasted wattle seed, strawberry gum, and the first of three types of peaches – native quandong.

There are also additional botanicals such as apples, finger limes, and fresh peaches that are placed in a botanical basket inside the still.

The brand has said the gin is delicate and layered with aromas of white stone fruit and white chocolate with hints of citrus and green apple . On the palate there is said to be a soft rounded sweetness and warm spice crossed with crisp apple finish.

While most Four Pillars gins finish production after the still, this expression continues to evolve post-distillation.

To amplify its Bellini-inspired profile, a yellow and white peach macerate (essentially alcohol that has had yellow and white peaches soaking in it for around four weeks) is married into the spirit, imparting a vibrant fruit flavor and a subtle hue.

Sarah Prowse, Four Pillars head of distilling, said: "We made it to a lower ABV of 37.8% (the same as our Bloody Shiraz Gin), which suits some of the more delicate botanicals and also happens to be pretty perfect for a brunch tipple.”

Three Peach Gin is recommended to be in cocktails such as a Peach Gin Spritz with mint, a Charlie Chaplin, Peach Bellini, and a Highball with soda water.

The limited edition gin is available to Four Pillars’ email database from 23 April at an MSRP of AU$82 (US$59).

The expression will be available to the public starting 28 April, accessible via the distillery’s website, the Gin Shop at the Four Pillars Healesville Distillery, global travel retail, and independent retailers.
