Four Pillars has just announced a new series of Whisky Barrel Gins, the first of which will start with a collaboration with an icon of Australian distilling - Lark Distillery!
"We’ve been mates with the Lark family and business since before we even began making gin. Bill and Lyn Lark were true pioneers of craft spirits in Australia and among the first people we spoke to about our gin dreams.
Our co-founder Stu succeeded Bill as the President of Australian Distillers in 2014. And LARK Master Distiller Chris Thomson has been a great sounding board and friend of Cam since 2016 – so it’s fair to say this collaboration has been discussed many times over the years."
The new Four Pillars Whisky Barrel Gin Lark Edition is a four-and-a-half year old barrel aged gin that first saw high proof Four Pillars' Rare Dry Gin aged in Sherry and Apera barrels for four years, before being finished in Lark whisky barrels for a further six months before the barrels were then all blended together and bottled at cask strength of 56.8% ABV.
This has created a final gin that is "a heady mix of dark spices along with preserved citrus and some nice malty notes". While the gin is still awaiting broad release, it's already won the highest accolade of Master at the World Gin Masters that called it "this remarkable gin shows rich Sherry, coffee cake and walnuts, and soft vanilla notes".
