Port Au Prince Distillerie's Providence has now joined the rum community as a consistent and staple rum expression that we've come to enjoy annually, with now numerous vintage releases.
The distillery was created in 2018 with a who's who of the spirits world, involving members of the Barbancourt family, Velier and Vittorio Capovilla - tying together Haitian rum ancestry, the rum world's biggest force and the champion of grappa, respectively.
We last saw the 2020 vintage released in 2023, and now we should come to expect the latest 2021 vintage.
The 2021 vintage is produced - as it always has been - from ancestral Cristalline sugar cane syrup, where here it was distilled in 2021 from the distillery's artisanal Muller's Bain-Marie still, and has been aged for 3 years in original ex-Providence, ex-Caroni and ex-Bourbon casks. This means there's now more components in the blend as compared to last year's only ex-Providence casks that were used.
The new Providence 2021 expression is a blend of 17 barrels of said original ex-Providence, ex-Caroni and ex-Bourbon casks, and has been bottled at 52% ABV.
