Pink Sea Salt Is The New Star Botanical in 2025's Monkey 47 Distiller’s Cut Release

Monkey 47's 15th Distiller's Cut gin is set to use hand-harvested sea salt crystals sourced from the pink salt marshes of Camargue in the 2025 edition of their annual Distiller's Cut series.
The Distiller's Cut is a collection of Monkey 47 gins, each involving the addition of a new unique ingredient to its existing recipe of 47 botanicals. Previous editions have seen the addition of ingredients ranging from capers to shamrock.
This year's pink sea salt is sourced from the Camargue region in the south of France, where fields of pink sea crystals are hand-harvested by farmers after the wind and sun evaporate 90% of the fresh water. Known locally as Fleur de Sel, the salt left behind at the bottom of the marshes is collected using a long-handled skimming tool.

The bottle itself is described as a must-have collectible, distinguished by its unique design elements.
It features a shimmering pale pink and blue label with an iridescent effect, paying homage to the pink salt marshes and blue skies of the Camargue region. This year's annual limited release will also feature a gold-coated bottleneck ring, a switch up from Monkey 47's usual silver ring with its signature engraving of the Latin phrase “ex pluribus unum” (“one out of many”).
Each 500ml bottle comes in at 47% ABV and is now available to purchase via raffle as of today (1 October) with sign up available on the Monkey 47 website.
