Saint James Releases Second Edition Of Les Ephemeres Vintage Cask Strength Rhum

Just a couple of months ago, Saint James revealed an exciting project initiated by its Cellar Master, Marc Sassier - a new collection of single vintage rhums bottled at cask strength. The Les Ephemeres range was designed to pay tribute to the great rhums of the Martiniquan distillery.

The inaugural release saw a 2001 cask strength rhum aged for 19 years before bottling. Now the second edition has been released - the Saint James Les Ephémères - N°7 - Brut de fut millésimé 2007. This is the second release in the four-part Les Ephemeres series, with the third and fourth releases being N°6 and then N°5 in that order. Together the sequential releases of N°1, N°7, N°6, N°5, forms the emblematic date 1765 which marks the founding year of the historic Martiniquan rhum distillery.

The nose opens with a very marked note of nuts (fresh and then a little caramelized). This is followed by a time of very clear freshness (a little sap, eucalyptus and even a little note of lavender), then woodiness, but it is very fine. At the end of the nose, vanilla and chocolate make their arrival. It's a beautiful nose, in which alcohol is almost absent.

It is first of all the freshness that is present on the palate, with slightly stewed fruit (mango) and some dried fruit (apricots). A very classic triptych, for the AOC Martinique, comes next: walnuts – always very clear – spices (nutmeg and pepper) and woodiness. Everything is melted and very precisely measured. The finish is long, and slightly bitter, nutty and woody."

The Saint James Les Ephémères - N°7 - Brut de fut millésimé 2007 was distilled via column still and has been tropically aged for 15 years, bottled at cask strength of 54.3% ABV, with a total outturn of 2,720 bottles to be released.
