Sipsmith Just Released Its Rarest Gin Dear Low Dykes, Inspired By Liverpool Bartender's Winning Serve
Last year cult favourite London-based ginmaker Sipsmith held its inaugural UK cocktail competition Cygnus - the winning crown was taken home by Liverpool bar Present Company's bartender Sam Wilkes-Green, who bested five other finalists in the competition, and in celebration Sipsmith has launched a limited edition gin that's created in collaboration with Sam.
The new gin is inspired by Sam's winning serve, Dear Low Dykes, which combined Sipsmith's VJOP with Sipsmith's Lemon Drizzle Gin, along with homemade apple and bay leaf cordial, clover honey, peppercorn distillation and Cremant de Loire sparkling wine.
The serve was inspired and paid homage to the ingredients and flavours reminiscent of Sam's childhood home in Low Dykes Barn, Cumbria, England.
Mirroring Sam's winning serve, the new Sipsmith Dear Low Dykes incorporates bay leaf, bee pollen, black, green and pink peppercorns, grapefruit and lemon peel, into the gin. The result is a spirit that has aromas of warming spiciness complemented by bright citrus notes, a palate of juniper, pepper spice and herbaceous bay, with a lingering finish of sweetness and warmth.
Only 260 bottles of Dear Low Dykes will be made available via the Sipsmith website, as well as Gerry's Wines and Spirits in London, and Speciality Wholesale.
The expression is bottled at 44% ABV and is priced at £35 (US$44).
