Word's out that Springbank would soon be releasing the second item in its experimental Springbank Sherry Series of whiskies. This comes after the Sherry Wood Pedro Ximénez Cask matured expression was released late last year.

Quick recap: The Springbank Sherry Series is a coveted five-part series which began last year in 2022. The series consists of 5 different whiskies partially matured in a variety of different sherry casks: Pedro Ximénez, Palo Cortado, Amontillado, Fino and Manzanilla. The bottles were planned to be released on a yearly basis from 2022 through 2026.

The intention is to give drinkers the with the full set the opportunity to taste and understand the nuances across the various sherry cask styles – if they can get their hands on these bottles at all!

Some of these casks are a little more experimental. The Palo Cortado and Manzanilla cask expressions are a first-of-their-kinds for Springbank.

This being the second year, we already have some details about the Palo Cortado expression that would soon be released. 

This expression had been matured for 6 years in refill bourbon barrels followed by 4 years in fresh palo cortado hogsheads made from American oak. 

Palo cortado is a rare type of Sherry not often used by whisky-makers. This variety of Sherry has undergone two types of aging processes: oxidative aging and biological aging. It is full-bodied style of Sherry that is comparable to Oloroso, but with more delicate and light nuttiness seen in Amontillado. 

We gather that the total outturn will be 10,200 bottles, with distillation date in July 2013 and bottling date in September 2023. It comes in at the standard 55.0% ABV. This drop is not to be missed!

Hazelburn Oloroso Cask Matured

On the topic of Springbank Distillery, we should also expect the release of a new 15 Year Old Hazelburn Oloroso cask expression. This had been matured in fresh Oloroso casks, bottled at 55.8% ABV with an outturn of 9,000 bottles in total.
