The Three Chimneys and Talisker To Extend Immersive Distillery Dining Experience with New Menu

Leading the charge in Scotland's emerging gastro-distillery trend, The Three Chimneys—a world-renowned restaurant with rooms— and The Isle of Skye's oldest distillery Talisker have revealed a new collaboration!
Following a successful immersive pop-up dining experience at the Talisker distillery in spring 2024, The Three Chimneys and Talisker have formalized a longer-term partnership.
This collaboration aims to further celebrate Skye as a premier global food and travel destination. As Skye’s most established and pioneering destination restaurant, The Three Chimneys will now take up a more permanent position at Talisker, showcasing the rise of the gastro-distillery, and reinforcing the island’s reputation for culinary creativity.
The new menus draw inspiration from the Talisker Distillery's coastal home on the Minginish peninsula, where the air is thick with sea salt and spray. Dishes are said to perfectly complement Talisker's maritime character, especially highlighting its signature notes of smoke, spice, peat, salt, and pepper.
Led by head chef, Paul Green and his team, The Three Chimneys at Talisker’s a la carte menu for summer 2025 will include (Among other things) freshly caught langoustines, oysters, mussels and scallops.
For nearly two centuries, Talisker has been inextricably linked to its wild, coastal home on Scotland's Isle of Skye. Founded by the adventurous MacAskill brothers, who rowed to Skye in 1830 to establish the distillery, the brand inspires a reconnection with nature, especially supporting wilderness restoration for future generations.
The Three Chimneys and The House over By boasts six guest rooms that are nestled on the shores of Loch Dunvegan against a backdrop of the Duirinish peninsula of Skye, just 30 minutes’ drive from Talikser.
The original five-star AA restaurant at The Three Chimneys is included in the Michelin Guide for Great Britain and Ireland, as well as the Good Food Guide. The newly designed waterfront venue at Talisker will also provide space for up to 40 diners, with advance online bookings of up to eight people per table welcome.
