
An unexpected surprise at @madame_sg that same evening was the presence of @burdekinrum’s Head Distiller Jason Chan, who “by coincidence” had a couple of Burdekin rum bottlings in tow. To share a little background about the rum brand, the Burdekin Distillery is located in North Queensland, in the eponymous region also known to be the sugar cane capital of Australia. Founded in 2020, Burdekin produces rums primarily of the French agricole-style, focusing on sourcing canes from the surrounding cane fields, crushing them, then distilling them through a custom 4,000 litre pot/column hybrid still.
I thoroughly enjoyed the rums, particularly those bottled under their Distiller’s Edition range, often experimental small-batch rums bottled at high proof, packed full of flavours that were so very enticing. My favourite had to be the Burnt Cane spirit which hit all the right notes, made from crushed burnt-cane from 2023, and aged for two years in a re-charred ex-bourbon barrel, producing lovely soft notes of toasted biscuits, coconut shavings, paired with rich vanillin and yellow fruits.
